Introduction

This is a very dense and chewy banana bread. It's wonderful toasted with some light cream cheese or a little peanut butter. My son loves it! This is a very dense and chewy banana bread. It's wonderful toasted with some light cream cheese or a little peanut butter. My son loves it!
Number of Servings: 16

Ingredients

    2 cups whole wheat flour
    1 1/4 tsp baking powder
    3/4 tsp baking soda
    1/2 tbs cinnamon or a 1/4 tsp nutmeg
    1 cup very ripe mashed banana (about 2 large bananas)
    1/3 cup honey
    1/4 cup milk

Directions

Blend together all of the dry ingredients. In a seperate bowl mix the wet ingredients. Add to the dry and mix until well blended. Spread into a greased loaf pan and bake in a 325 oven for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes. Invert onto a cooling rack after 10 minutes. Cool completely before slicing.

Makes 16, 1/4 inch slices

    Incredible!
    I added 2 1/2 bananas instead of 2, a small pinch of sea salt, and 1/2 cup toasted walnuts to the original recipe. After having a slice after taking it out of the oven I can safely say this is my new banana bread recipe!!! It is low fat, not too sweet, and has a great texture! Thanks! - 3/22/09
