Ingredients

    1/2 Lb shrimp - peeled and deveined
    1/2 Lb angel hair pasta
    2 tbsp. olive oil
    2 tbsp. butter
    1/2 small onion
    1 zucchini
    1/4 cup parmesan cheese grated
    1/2 lemon

Directions

Saute onions in olive oil. In seperate pot cook pasta according to package directions. Add zucchini to onions and cook for a few minutes. When pasta is cooked drain well. Add shrimp to onions and zucchini along with the juice from 1/2 of a lemon. When shrimp is done add the pasta to the shrimp and veggies. To finish add the butter, zest from the lemon and parmesean cheese, remove from heat. Toss together. Salt and pepper to taste. Optional: add parsley to garnish.

    I liked this, but I used couscous instead of pasta and only used 1 T oil and 1 T butter. I added a little more cheese. I am sure I will make it again. - 11/12/08
