Introduction

This is the Okra recipe I made with fresh veggies from my garden, without added spiciness so the whole family would like. One could garnish their bowl with diced or sliced jalepenos, hot sauce, red pepper or the like if they like it spicy. Ingredients

    36 oz Pork, fresh, loin, center rib (chops), boneless, separable lean only, cooked, braised
    12 oz Pork Sausage, fresh, bulk, cooked
    4 tbsp Shortening, Crisco
    0.25 cup Flour - Gold medal all purpose flour
    2 serving 1 Med. Green Bell Pepper
    2 large (2-1/4 per lb, approx 3- Sweet peppers (bell)
    2 medium (2-1/2" dia) Onions, raw
    4 tbsp chopped Shallots
    4 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
    4 cup slices Okra
    3 tsp Mrs. Dash (R) Original Blend
    32 cup (8 fl oz) Water, tap

Directions

Dice vegetables, keeping tomatoes and okra seperate. Brown pork chops lightly in wok seasoning liberally with Mrs. Dash; dice and set aside. Cook sausage in wok, stirring to keep crumbled; remove from pan and add to bowl with diced onions, peppers, and shallots, set aside. Make roux by melting shortening in wok with any drippings over low heat and whisking in flour, continuing to stir constantly and cook for 10 or 15 minutes until dark golden/ brown. Add vegetables and sausage, cooking over medium-low and stirring constantly until onions get tender/ translucent. Slowly add half of water bringing to a boil and mixing well; transfer to desired stock pot or slow cooker. Add pork, diced tomatoes, okra, and desired amount of water. Simmer an hour in stock pot or to desired doneness.
