Ingredients
-
350 grams Pork, fresh, loin, tenderloin, separable lean only, cooked, broiled
2 large Onions, raw
2 tbsp Rapeseed Oil tblsp (by MIKAZZA2)
2 large (3-1/4" dia) (approx 2 p Apples, fresh with skin
.3 serving Strongbow cider 440 ml can (by CHADDERS2455)
1 serving Knorr Chicken stock cube
200 g Tesco Healthy Living Extra Light Soft and Smooth Cheese (UK)
1 dash Salt
Tips
This goes beautifully with mash, diced carrots and steamed peppered Savoy cabbage.
Freezes brilliantly as a home ready meal.
Directions
Fry onions in oil and salt.
Have Bramley apples peeled, cored and sliced ready. I use two large Bramleys.
Add strips of pork to onions once heat is raised, and brown well on both sides.
Add apples and coat with juices.
Pour over the whole can of cider (the reason for the quantity reduction in the recipe is to reflect the calories lost in cooking off the alcohol).
Add chicken stock, made up with half a tea cup of boiling water.
Simmer until significantly reduced.
Add 200g low fat soft cheese and work in over a low heat.
