Ingredients

6 7- or 8- inch whole wheat tortillas (I use Trader Joe's, with flax, etc.)
1 cup chopped onion
1 tbsp olive or cooking oil
1 16-ounce can fat free refried beans
1 cup shredded reduced fat mexican cheese (like Sargento)
1/3 cup salsa
1 cup shredded lettuce
Directions
1. Stack tortillas & wrap tightly in foil. Heat in 350 degree oven for 10 minutes to soften.
2. In a skillet cook onion in hot oil until tender; add refried beans. Cook and stir until heated through. Spoon about 1/4 cup of the filling onto each tortilla just below center. Divide cheese among tortillas. Fold bottom edge of each tortilla up and over filling. Fold opposite sides in and over filling. Roll up from bottom. Place on baking sheet. Bake in 350 degree oven about 10 minutes or until heated through. Serve with lettuce and salsa.
