Ingredients

    4 cups Pork Tenderloin cooked
    3/4 cup Kraft Real Mayo
    2 Tbls Yellow Mustard (to taste) may substitute dijon
    2 cup, shredded Cheddar Cheese
    4 cup Green Giant Riced Cauliflower
    1/3 med onions, raw, purple/red
    5 cup, chopped Cabbage, fresh
    .75 tsp Salt
    .5 tsp Pepper, black
    2 tbsp Butter, salted

Tips

the layer of cabbage and onion on the bottom helps the melted cheese not stick to the bottom of the pan. With everything fully cooked before heating you get a whole different texture serving without heating.


Directions

saute onion and cabbage in frying pan. mix pork and mustard in large bowl. Layer the onion cabbage mixture in bottom of buttered 9 x 13 casserole pan using a little more than 1/2 of the mixture. Add remaining sauted onion cabbage mixture. Cook riced cauliflower in same pan to take chill off. Add to pork mixture along with 1 1/2 cups of cheddar cheese. mix well then add mayo and finish mixing. Layer this on top of the onion/ cauliflower layer. Sprinkle with remaining cheese. Cook at 350 degrees for 30 minutes just to warm through and melt the cheese.
