Introduction
a great way to get your kids eating veggies without them knowing. a great way to get your kids eating veggies without them knowing.Number of Servings: 12
Ingredients
-
2 packages lean veal - I grind it myself or have your butcher do it. (approx 750-800 grams)
2 onions
3 carrots
1 red pepper
3 garlic cloves
2 zuchinni or summer squash
1/2 lb mushrooms
2 cans tomatoes
1 can crushed tomatoes
basil and or other italian herbs.
Directions
Step 1: brown lean ground veal and then drain it in a colander so all the fat gets drained and rinse it in water.
Step 2: Chop all the fresh veggies in a food processor until finely minced.
Step 3:Puree two cans of tomatoes in processor as well.
In a large pot over medium heat add 1 tsp olive oil and add in chopped veggies. Then add ground veal back and then add tomatoes and the can of crushed tomatoes. Simmer for a long time. The veggies will disappear into the sauce and your kids will get lot of veggies with their pasta and meat sauce. ( for adults feel free to add a cup of red wine and let that meld into the sauce.
You probably could cook it in a crockpot but i haven't tried it yet. Enjoy!
