Introduction
I make this a lot for my kids school lunch. It is very easy to make and great way to used up left over cooked rice. I pre-cut and freeze my green onion . This way there is almost no prep time. Ingredients

2 cups cooked rice
5 tsp sesame seed oil, devided
2 large eggs
1/4 cup green onion, thinly sliced
2/3 cups frozen mixed vegetabls
1-2 tbs soy sauce
salt and pepper to taste
Directions
1. Warm up rice in microwave about 1 minute. Crack eggs in a bowl, sramble lightly. Put 2 tsp of sesame seed oil in a 10 inch non stick frying pan and heat the pan over medium high heat.
2. Pour egg in the pan, make scrumble eggs. Set aside.
3. In the same pan, heat up 2 tsp of oil again over medium high heat cook green onion till its fragrant. Add frozen vege. Cook till warm through.
4. Add rice. Turn the heat down to meidum. Mix well. Bring the rice mixure slightly off from the edge of the pan. Pour soy sauce between the rice and the edge of the pan. You want to hear soy sauce sizzle a bit. It gives extra flavor this way. Mixe rice quickely and well, and right before you turn off the heat pour 1 tsp of seasme seed oil. Mix well.
