This recpie works best if you have a cast iron skillet, or similar that you can transfer from the stove to the oven. Otherwise transfer to a 9 inch pie pan before adding the eggs and bake for 15-20 minutes at 350. Ingredients

2 links Chorizo Sausage, cut 1/4 inch thick.
6 large eggs
2 cups shredded spinach
1 cup mushrooms, thinly sliced
1 cup cherry tomatos cut in half
1 tsp finely chopped garlic
3 tbsp fresh oregano finely chopped (or 1 dried)
1 tsp lemon juice
1 cup grated mozzarella cheese (part skim)
Directions
1) Preheat oven to 325 F( 165 C)
2) On medium heat, fry the chorizo until it slightly browns, and loses oil to the pan, set aside
3) Fry the garlic, spinach and mushrooms in the chorizo oil for 3-5 minutes until they release their moisture, put back the chorizo.
4) Beat the eggs and oregano until frothy. They won't form peaks with the yolk, but should have lots of bubbles.

5) Pour into the skillet, and reduce heat to low. Cover, and cook 5 minutes.
6) Transfer the skillet to the preheated oven. Bake 10 to 15 minutes, until eggs are no longer runny. 7) Mix the 1 tsp lemon juice with the mozerella, coating it. Top the egg mixture with mozzarella cheese. Turn on the broiler, and broil until cheeses are melted and lightly browned.
