Introduction
Greek or Georgian non-yeast lavash is good to have at home. In some occasions, it can be a quick fix as a base for a delicious meal.It is recommended to have fresh greens : leeks, green onions, cilantro, parsley, dill. I used green onions and dried herbs, because that's what I had at the moment. Leeks work very well.

6 large Egg, fresh, whole, raw
4 tbsp Extra Virgin Olive Oil
1 cup Ricotta Cheese, whole milk
1 cup Parmesan Cheese, grated
1 cup cottage cheese, Hood Country Style
5 serving Green Onion (fresh-1 stalk)
1 tbsp Cilantro, dried
0.5 tsp Pepper, black
1 dash Salt
0.5 tsp Paprika
10 sprigs Dill weed, fresh
4 serving Lavash
Directions
I have lavash packaged 3 pieces, 15 oz, 1 serving for piece. I used about 2 lavashes, 4 servings.
Whisk 5 eggs with salt. Add spices, milk, about 2 tbsp of oil, mix, add, chopped greens, mix, grated cheese, mix, finish with adding lavash pieces to the mixture, teared by hand. Evaluate the consistency and add ricotta. Grease baking pan with remaining oil, cover with 1 egg, and bake at 400F until ready, about 20-25 min.
