Ingredients

    1 tbsp Extra Virgin Olive Oil
    170 grams Shiitake Mushrooms (about 6 oz)
    190 grams Cremini Mushrooms (about 6 oz)
    1 tbsp Soy sauce (tamari)
    1 fl oz White Wine
    4 clove Garlic
    1 small Onions, raw
    4 Serving(s) Culinary treasures vegetable broth
    6 serving(s) Trader Joes Coconut milk
    0.5 tsp Better Than Bouillon Vegetable Base

Directions

Wash and dice mushrooms into small pieces. Chop onions and mince garlic. Add olive oil to pot or sauce pan. Let pre heat over medium flame. Once the oil is sizzling, add onion. Saute for 1-2 minutes, stirring frequently, and add garlic. Continue for one minute or until aromatic. Add both kinds of mushroom and stir. Cook for about 5 minutes or until they start to release juice. Deglaze with a dry white wine. Add soy sauce, coconut milk, broth, and bouillon is so desired. Cook for 20-30 minutes, stirring occasionally, until the mushrooms are tender. Optional: blend with immersion blender for a smooth cream of mushroom soup. Serving Size: Makes 8 servings of 1 cup.
