Ingredients

    2 Lb Sanderson Farms Boneless Skinless Chicken
    1 cup Buttermilk
    1 tbsp Chili powder
    3 tsp Cumin
    3 tsp goya adobo
    2 tsp Garlic
    2 tsp Red Pepper Flakes
    10 oz Rotel Diced Tomatoes & green chilis (by ERIKIM2004)
    1 1/4 cup Cheese - Food Lion - Mexican 4 Cheese - 110cal/1/4 cup
    1 Cup Tostitos queso Blanco dip

Tips

I think this would be better in the crockpot. I would cook on low for 8 hours and shred. Maybe I will try that. Served over salad or on a whole grain or low carb tortilla would be good.


Directions

Soak chicken in buttermilk at least half an hour, up to overnight. Drain and pat dry. Add taco seasoning to each side and place in a baking dish (I make my own seasoning using the ingredients listed. I usually add oregano, but I was out). Drain rotels and put half a can over the chicken, layer with queso, and then the remaining rotels. Top with cheese. Bake at 375 for 25-30 Minutes
