Number of Servings: 16

Ingredients

    2 lb carrots, chopped
    3 large green onions
    2 bunches of celery, chopped
    2 green bell peppers, sliced
    2 cans stewed tomatoes
    2 cans green beans, drained
    1 box or large can of beef broth (low fat)
    1 packet of Lipton Chicken Noodle soup mix

    1 T Thyme
    2 tsp Salt
    1 tsp Pepper
    2 Bay Leaves, whole
    Beef Bouillon to taste (2 T)

Directions

Throw everything into a large soup pot, including the broth. Add water until vegetables are covered by at least an inch. Bring to a fast boil and boil for 10 minutes. Lower heat and allow to simmer for another 20 minutes, stirring occasionally.

Makes at least 10 2-cup servings (that's a conservative guess). Refrigerate leftovers.
