Introduction

This is a very good side dish, especially with pork. This is a very good side dish, especially with pork.

Ingredients

    5 red potatoes, peeled & cubed
    8 oz cream cheese, light
    2 T sour cream, light
    Parsley, dried (to taste)
    Salt & pepper to taste

Directions

Wash, peel and cube potatoes. This is what takes the longest to complete. Boil potatoes in water for 15 minutes or until tender enough to break apart with a fork. Drain water and add cream cheese and sour cream. Stir with spoon, DO NOT MASH, to create fluffy lumps. Add salt and pepper to taste and sprinkle with parsley. Makes around 3-4 servings.
