This is quick and delicious. Sometimes I throw in raisins or celery or substitute diff. kinds of nuts, whatever is on hand.
Serve on a sandwich, in a wrap, or on a bed of lettuce-needs no dressing.

Ingredients

    3 chicken thighs, skinnless and boneless
    small apple
    chopped walnuts
    nonfat plain yogurt
    mayonaise (Duke's if you're from SC)
    salt and pepper to taste

Directions

Boil chicken until done and allow to cool, then chop. Chop apple. Combine everthing and allow to chill.
