Ingredients

    1 large onion
    2 cup Beans, black
    2 cup Yellow Sweet Corn, Canned
    16 oz Kirkland Chicken Stock
    1.5 cup, chopped or diced Broccoli, fresh
    1 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    2 chipotle peppers
    cumin to taste
    adobo to taste
    chili powder to taste
    paprika to taste

Tips

blender can be used instead of an immersion blender. soup should be cooled with use of a regular blender


Directions

in a large saucepan or pot
saute finely diced onion in 1 tablespoon oil until translucent
add cubed cube potatoes, chicken stock (or vegetable stock) and all of broccoli.
cook until potato is softened.
add chipotle peppers
blend all with an immersion blender until smooth
add corn and black beans (both drained if from a can)
add seasoning to taste

serve with chips, cheese and sour cream
