Introduction
Replacing flax seed for bread crumbs, with the eggs, accomplishes binding. pork rinds up the fat content for Keto macros, and a blanket of bacon adds extra flavor. (because everything is better with bacon!). All with less than one carb!Higher fat, non-lean ground beef is a must. For an extra surprise, add chunks of cheddar inside the loaf for gooey goodness.
This recipe uses reduced sugar ketchup but a homemade, low carb barbecue sauce is a great substitution.
I serve this with mashed loaded turnips, cooked like potatoes, drained, with cream, butter, bacon, and sour cream! Ingredients

24 oz 73% Lean Ground Beef
2 large Eggs
1 ounce Pork Rinds, crushed
8 slices Bacon
4 tbsp *Flax Seed Meal (ground flax)
4 tbsp Heinz, One Carb Reduced Sugar Tomato Ketchup
1 tsp Salt
Pepper and other spices, to taste - garlic, paprika, chili powder, oregano, basil, etc (even a dash of nutmeg adds oomph)
Tips
If the grease in the cookie sheet generates any smoke during cooking, simply add some water to the bottom of the pan.
As an alternative to a loaf, you can form a ring around a mason jar, on a parchment lined cookie sheet (with sides). While cooling, the mason jar will pull the excess grease inside!
Directions
Preheat oven to 375 degrees.
Mix all ingredients except the bacon and ketchup.
Form a loaf but do not leave in loaf pan.
Place loaf on a cookie cooling wire rack OVER a cookie sheet with sides. This will allow excess grease to drip off of the loaf and create a lovely crust on all sides - no soggy mess here!
Drape or wrap the bacon around the loaf and spread the ketchup on the top.
Bake in a 375 degree oven for approximately an hour, or until the internal temperature reaches 165 degrees.
Allow to cool for 10 minutes before slicing and serving.
