Ingredients

    1 lb of boneless, skinless chicken breast cut into 1/2" strips

    8.5 oz can of pineapple chunks (use juice)

    1/2 cup duck sauce

    2 tbsp brown sugar

    1/4 cup of rice vinegar

    1/4 cup of orange juice

    1 tbsp cooking sherry

    1 tbsp soy sauce

    1 lb of frozen oriental veggie mix

    1 tbsp salt

    1 tsp ground ginger

    2 tsp corn starch

    1 tbsp of hot water




Directions

season the chicken with salt and ginger

Marinade: mix the pineapple juice, duck sause, brown sugar, vinegar, soy sauce, cooking sherry, and OJ in a pan and cover for 3 mins

stir in 1/4 cup of marinade and pineapple chunks with chicken in another pan on medium heat for 4 mins

flip the chicken over and stir in the rest of the marinade and add the corn starch

cover for 3mins

stir and cover for an additional 2 mins
