Ingredients

    1 fresh Eggplant, washed, unpeeled and sliced lengthwise in approx. 5 to 6 - 1/2" slices

    1/4 cup of homemade or store bought pizza sauce

    Approx. 30-40 Pepperoni slices

    1/2 cup of raw onions (I like to lightly saute them prior to assembly)

    1 small can of sliced Black Olives

    6-8 oz of grated Mozzarella Cheese

    Olive oil and Red Pepper Flakes as needed

Directions

This is a fun and easy main dish or snack to make. Pre-heat your oven to 450 degrees F.

I like to slice my unpeeled Eggplant lengthwise to make big oval pieces, but you can slice it the other way for smaller pieces if you're serving kids. Lightly brush the slices with olive oil and brown them on your BBQ, indoor grill or pan (approx. 5-8 min.). Place the slices in a large flat oven pan.

Add a light layer of Pizza Sauce, top with Pepperoni, Onions, Black Olives and Cheese. As with any pizza, you can vary the ingredients to your tastes. Sometimes I like make it with Sausage, Mushrooms and Jalapenos. Get creative!

Cook for 10 minutes. Open the oven door and Broil until cheese is bubbly and golden brown.

Garnish your pizza with Parmesan Cheese and Red Pepper Flakes. Add a small salad and you have a meal. Who needs pizza crust when healthy pizza tastes this good!

    Great idea - I'd never thought of using eggplant this way. I topped mine with whatever pasta sauce I had open in the fridge, plenty of red pepper flakes, red onion, mushroom, spinach and mozzarella. DELISH! I haven't had this much delicious bang for my caloric buck in awhile. - 6/1/10

    This recipe was great! i just topped it off with crushed pineapple and fat free mozzarella cheese...still lots of flavor for someone who doesn't like olives, onions or mushrooms! I've made it several different times for new guests and it's a big hit! =) - 12/7/09

    Delish! My recipe variation: Microwaved the eggplant slices first. Left off the pepperoni, onions and black olives. Used marinara instead of pizza sauce, then topped eggplant with grilled chicken strips, slice of Jersey tomato, thin slice of fresh mozzarella. Sprinkled parmesean on top. Yum! - 8/12/09
