Introduction

I had some peppers and ham that needed to be eaten at the inlaws and their food isn't very healthy so this was a great alternative. I actually couldn't eat it all. It made about 10 oz and I only ate about 6 oz. I had some peppers and ham that needed to be eaten at the inlaws and their food isn't very healthy so this was a great alternative. Ingredients

    1.5 oz of each red, green and yellow pepper chopped or diced.
    4 slices of Aldi Honey Ham chopped into bite sized pieces
    2 eggs
    1/3 c shredded mild cheddar cheese (inlaws had walmart brand)
    2 T Pace picante sauce
    garlic powder, onion powder, salt and pepper to your usual taste (for the egg mixture)

Directions

Chop peppers and meat and saute in skillet until meat starts to brown and veggies begin to get tender. Between stirrings, mix eggs with seasonings. When the meat and veggies are ready add the eggs and seasoning and continue to stir around until the eggs thoroughly cooked. Put on the plate and top with cheese and picante sauce. Serve warm.
