Introduction
Once again I needed to use my zucc and just started throwing things in. This has onions and cheese which are my favorites, but it's low in fat. Ingredients

-8 oz or about 230 grams of diced onion (I use white)
-23 oz or about 24 grams of zucchini (I had a very large one in my garden)
-2 t minced garlic
-1 bag of Morning Star Farms Meal Starters Crumbles (12 oz bag but the nutrition says 2/3 c servings with 6 servings)
-80 grams chopped frozen spinach
-1 bag of Shop n Save Six Cheese Italian Cheese (this is lower in calories than the others)
-1 can of Walmart's evaporated Fat Free milk 12 oz can
-salt and pepper to taste
Directions
Dice your onions and zucc and put in a large pot with minced garlic over med/high heat until tender. Add your bag of Morning Star Crumbles and stir until well mixed. Add the chopped spinach and stir again. Reduce heat and let simmer about 2 minutes and then add the cheese and can of milk. Stir until well blended and heated. Serve warm. Add salt and pepper to taste. Makes about 8, 1 C servings.
