    1 med. egg
    1/2 cup egg sub.
    1/2 cup canola oil
    1/2 apple sauce
    1 cup shredded raw zucchini
    3/4 cup sugar
    1 cup whole wheat flour
    1/8 tsp baking powder
    1 tsp bakin soda
    1 tsp cinnamon
    1/2 tsp salt
    1 tsp vanilla
    1/4 cup chopped walnuts


put flour, soda, powder, salt and cin. in bowl set aside
mix egg and sub,oil, applesauce, sugar and van. then blend
stir in flour mix until all combined then mix in nuts and zucchini
pour into sprayed loaf pan and bake 350 for about hr. or until fork pulls out clean.. ( put foil on top if needed if getting to dark)
you can sprinkle some powdered sugar on top.
also i like to spray my warmed with spray butter.

    this recipe was wonderful, brought it to work .it was gone in minutes.i also changed two things i used regular eggs and i did not use applesauce .i only had strawberry favor - 9/18/08

    great recipe! my family really liked it. the only change i made was to use all real eggs instead of egg sub. - 8/28/08
