Introduction

This is a variation on a recipe I found on another website using ingredients I happened to have in the house. Great with some crusty french bread or a bowl of soup. Ingredients

    2 tbsp. grated ginger
    3 cloves minced garlic
    1 tsp crushed red peppers
    2 limes, juiced
    1 tbsp vegetable oil
    1/4 cup chopped cilantro
    1 tbsp soy sauce
    1 tsp granulated sugar
    8 oz medium cooked shrimp
    1 8 oz can sliced water chestnuts
    1 16 oz bag american (iceberg) salad
    1/2 english cucumber, diced
    1/2 cup shredded carrots

Directions

Add first 7 ingredients (through sugar) to a large bowl. Mix well. Add a pinch of salt, or to taste. Add shrimp, tossing to coat. Let sit about 10 minutes to let shrimp absorb the flavors. While you're waiting, chop water chestnuts and cucumbers and shred carrots. Add to bowl along with salad mix. Toss together and serve!

Makes 4 dinner sized servings.
