I love gumbo! This is a simple recipe I make for our family. I add to it sometimes with shrimp, okra, crabmeat, etc. Whatever I feel like. Serve over rice and have a salad with it. I love gumbo! Ingredients

    Zatarain's Gumbo Base 1.5 Tbs (not prepared), 13.5 tbsp
    Chicken Breast, no skin, 3 breast, bone and skin removed
    Green Peppers (bell peppers), 0.5 cup, chopped
    Onions, raw, .5 cup, chopped
    Shallots, 2 tbsp chopped
    Smoked sausage, 16 oz
    Garlic, 2 clove
    Water, tap, 10 cup (8 fl oz)
    Campbell's low sodium chicken broth, 4 cup

Directions

Cut sausage and chicken into bite sized pieces. Brown in skillet. Set aside. Saute onion, bell pepper, garlic in a large pot until onion is clear,then add water, broth, meat and Base. Stir thoroughly to dissolve lumps. Bring to a boil, reduce heat and simmer for approx 45-60 minutes. Serve over rice. Makes about 20 - 1 cup servings. You can add more broth and less water if you like. You can also use beef broth or vegetable broth instead. Many people still make the roux themselves, but I am afraid that I have gotten lazy and use the base more often than not. It is much quicker and easier when you are so busy.
