Ingredients

    2 LBS RIPE TOMATOES (5 LARGE)
    1 T. OLIVE OIL
    HALF SPANISH ONION- SLICED THIN
    2 Tsp. chopped fresh garlic
    2 T. chopped fresh basil
    1/4 tsp salt
    pepper to taste
    2 T. light sour cream (optional)
    2 T. chopped fresh chives

Directions

MAKES 6 SERVINGS - 1/2 C. EACH

1.PEEL TOMATOES -BY BLANCHING DISGARD SEEDS ( JUST SCOOP THEM OUT)

2. HEAT OIL OVER MED. HEAT; COOK OLION AND GARLIC UNTIL TENDER -APPROX 5 MIN.

3.PUREE TOMATOES AND ONION MIXTURE THAN STIR IN BASIL SALT & PEPPER TO TASTE. REHEAT BUT DO NOT BOIL. YOU COULD COVER AND JUST PUT IN FRIDGE AND SERVE COLD.

4. GARNISH WITH SOUR CREAM AND CHIVES.
