Ingredients

    5.5 cups water
    2.5 cups dried split peas (no need to presoak)
    0.5 cups onion, finely diced
    1 cup carrot, grated
    5 oz cooked turkey breast meat, diced or shredded
    1 tsp black pepper (to taste)
    0.5 tsp sea salt
    1 tbsp lemon juice
    3 cloves garlic, minced
    1 tsp marjoram, fresh if avail, minced
    4 cups vegetable broth, low sodium

Directions

Yield: 6 x 1.25-cup servings
Cooking time: 1h45m

Combine water, broth, peas, onion and turkey in a large soup pot over med heat. Bring to a simmer and cover for about 1 hour, stirring occasionally.

Add carrots, pepper, salt, garlic and marjoram to pot and mix well. Simmer uncovered for 45 minutes or until soup starts to thicken. Stir occasionally, reduce heat if soup sticks to bottom. Peas should be soft and tender now.

Remove from heat and stir in lemon juice. Serve immediately. Freezes well!

Veggie version - just omit the turkey!

    I added a Bay leaf & chicken bouillon to 6 1/2 c. water as I didn't have veggie stock with slightly less onion, garlic & marjoram! My picky DH had 2 bowls! - 12/5/09

    This was lovely.Finished the whole pot in one go.Easy to make.Did add 2 potatoes. - 1/1/09

    Glad you liked it - I added a whole grated potato when I made it last week too!
