Ingredients

    2 envelopes (4 svgs each) Idahoan Baby Reds Homestyle Mashed Potatoes
    4 cups milk
    2 cups mushrooms, chopped
    1 large carrot, diced
    1 med. stalk celery, diced
    1/2 jar Central Market Organic Smoky Barbeque Sauce
    1 bag Morningstar Farms Burger Crumbles
    1/2 (16 oz) bag frozen petite peas
    1/2 (16 oz) bag frozen whole onions
    1 tsp dried oregano
    1 tsp dried parsley
    1 tsp dried marjoram
    1 tsp dried thyme
    1/2 cup shredded mexican cheese blend

Directions

Prepare mashed potatoes according to package instructions, but substitute milk for water.

Cook the mushrooms, celery, and carrots until mushrooms are soft. Add barbeque sauce and heat through. Add frozen "burger" crumbles, peas, and onions, heating between each addition. Season with herbs.

Pour "meat" mixture into 9x13 inch baking pan. Top with mashed potatoes. Sprinkle with cheese.

Bake at 350-degrees for approx. 25-30 minutes.
