Ingredients

    -1 cup old fashioned oats (not instant)

    -1/2 cup unsweetened applesauce

    -1/2 cup canned pumpkin

    -2 large egg whites + one yolk, lightly beaten

    -2 tbspn + 1 tsp canola oil

    -1 tbspn baking powder

    -1/2 tsp baking soda

    -1 tsp cinnamon

    -1/4 tsp nutmeg

    -1/2 cup milk or apple juice

    -1/2 cup quinoa flour

    -1/4 cup whole wheat flour

    -1 scoop natural flavored protein powder

    -3 tbspn flax seed meal

    -1/4 cup maple buckwheat flake cereal, crushed

    -1/2 cup raisins or cranberries


    p.s. fat free sour cream makes a perfect spread for these muffins

Directions

-preheat oven to 375 F. spray muffin pan with cooking spray.


-measure and mix all dry ingredients in bowl and set to side.


-combine oatmeal, pumpkin, applesauce, milk, eggs and oil. mix until all ingredients are blended.


-combine the dry and wet ingredients together and blend thoroughly. fill muffin cups about 2/3 high.


-bake 15-20 minutes or until tops are lightly browned.

    Very Good
    These are very good... I did substitute the canola oil, for olive oil; i used soymilk, instead of milk or apple juice; and i did not add the quinoa (just didn't have any!); i also used bran flakes cereal instead of buckwheat; and i added 1/4 cup of raw local honey. Very good. - 10/15/09
