Introduction

Ingredients

    2tsp Olive Oil
    2 leeks, whites only, washed well and chopped
    1 clove garlic, minced
    1 small potato, peeled and chopped
    8 ounces of frozen artichoke hearts, thawed
    2 cups chicken broth or stock
    2 TBSP Mascarpone Cheese, plus more for garnish
    Chives for garnish

Directions

Heat oil in a large,heavy pot. Add leeks and garlic and stir. Add potatoes and cook for 5 minutes. Add artichokes, broth, salt and pepper and cook for about 20 minutes or until vegetables are tender. Blend the soup in batches until smooth. Add 2 TBSP of Mascarpone and stir until mixed. Serve garnished with mascarpone and chives if desired. Makes 4 servings (Giada De Laurentis)
