Introduction

Ingredients

1 cup cooked Brown Rice
1 cup cooked bulgur
1/4 cup julienned canned or pickled beets
1/4 cup chopped raw scallions
1/8 cup slivered toasted almonds
1/4 head red leaf lettuce
3 tbsp rice wine vinegar
.25 grated carrot
4 oz. grilled or poached chicken breast, no skin
Directions
If you want to make this quickly, use all bulgur which cooks faster. While the brown rice and bulgur are cooking, chop and wash all the veggies (except lettuce) and combine in a bowl. When the rice and bulgur are done, add them, while still warm, and add the rice vinegar. Toss to combine.
Put torn lettuce leaves on a plate. Top with rice mixture. Garnish with shredded poached, grilled, or roasted chicken and toasted almonds on top.
