Introduction

Yummy vegetarian stew. Perfect with crusty bread as a comforting Fall/Winter dinner. Yummy vegetarian stew. Perfect with crusty bread as a comforting Fall/Winter dinner.

Ingredients

    1TB olive oil
    1 tsp butter
    medium onion, sliced thin
    5 small/medium potatos cut into chunks
    1.5 cup carrots cut into chunks
    large ear of corn, kernels cut off
    2C veggie boulion
    2C TJs french onion soup broth
    1 cup peas, frozen
    8 Morningstar sausage links
    2 veggie burgers
    salt
    pepper

Directions

Heat oil and butter in stew pan. Slice onion thin and saute in oil and butter. Add veggie sausages and veggie burgers, cut into chunky pieces and cook until browned. (you may add a bit of broth if it starts to burn). Add veggies and broth/boullion. Season as desired (salt, pepper, etc.) Cook until thickened and potato/carrots are tender. Approx. 30 minutes.

    Incredible!
    OK...I used beef which is totally AGAINST the point, and my own mix of veggies, but it was really good. Thanks for giving me the basic idea anyway! :) - 10/6/08
