Introduction

This is a yummy recipe we "borrowed" from our favorite local mediterranean restaurant. After several tries, we figured out the recipe on our own. It goes great with some roast chicken, a large salad, and hummus with pita. This is a yummy recipe we "borrowed" from our favorite local mediterranean restaurant. Ingredients

    1 clove of garlic
    2 slices large red onion
    1/2 cup fresh parsley
    2 Tbsp Extra Virgin Olive Oil
    2 Cups Red Creamer Potatoes
    Salt
    Pepper

Directions

Mince the garlic, onion, and parsley and place in a heated skillet with the olive oil. Sautee briefly. Add approx 2 cups of diced small potatoes *I find the red creamer potoatoes to be best for this recipe*. Continue to brown the potatoes stirring periodically. Add salt & pepper to taste. Yields approximately 4-1/2 cup servings

    I made these tonight with white fish packets. They complimented one another and the leftover leek, mushrooms and peppers I put in the pan with the potatoes. Very easy to make and a nice way to prepare potatoes plus added veg very - 6/26/13
