I never thought about soaking fish in lemon juice. This was a wonderful change. I mixed 3 tbsp of cornmeal, with 1 tbsp of parmesean cheese and lemon pepper to taste, then coated my lemon juice soaked fillets (5). Baked for 20 minutes - very good! So much healthier than fried. - 9/19/10
