Introduction

Number of Servings: 6

Ingredients

    2 cups water
    1 cup quinoa
    1/3 cup dried cranberries
    1/4 cup slivered, blanched almonds
    1/4 cup dried coconut flakes (organic)
    6 packets stevia powder sweetener (or equivalent)

Directions

Heat skillet over medium-high heat. Add almonds to skillet and toast until golden brown (2-3 minutes). Combine water, quinoa (soaked and rinsed if package calles for it), cranberries, coconut, almonds, and stevia in pot with tight fitting lid. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Turn off heat and let sit for 5 more minutes. Serve warm topped with non-fat greek-style yogurt or chilled with a little soy milk or lowfat milk (makes a great breakfast cereal cold). Makes approx. 6 half-cup servings.

    This is wonderful! I used a bit more Splenda and dried tropical fruit instead of cranberries. A whole serving would be a great breakfast. I had a half of a serving as a dessert. - 2/14/10

    I made this recipe following it and got 8 1/2 cups instead of 6. It was delicious. Will enjoy this breakfast for a number of more mornings. - 11/18/18

    Very Good
    I'm new to cooking/eating Quinoa and found this recipe to be quite delicious. I did leave out the coconut as I don't care for that and just subtracted the calories etc. for that ingredient. This has become something I love to just take 1/2 serving for as a sweet snack. Thank you! - 3/23/12
