Introduction
This is a mix of potato and clam chowder. It's super yummy and wonderful for busy winter weekdays. *Note: If you aren't too fond of a really fishy taste, use a can of plain clams (meat only) instead of the white clam sauce. You'll also save on fat and calories, I believe. This is a mix of potato and clam chowder. Ingredients
-
1 1/2 can Swanson Vegetable Broth
1 Large White Onion
2 Large White Baking Potatoes
4 Carrots
1/2 can Progresso White Clam Sauce OR 1 can Clam meat
8 oz Fat Free Cream Cheese
1 Tbsp Pepper
Directions
Wash and chop potatoes, carrots, and onion into small chunks and toss them into a 4 qt slow cooker.
Add pepper, veg broth, and clams.
Mix as well as you can. It's a bit of a tight fit, but it works.
Cook on LOW for roughly 6 hours or on HIGH for roughly 3 hours.
30 minutes before you're ready to serve, add the cream cheese, in chunks, to the slow cooker.
Stir well to incorporate cheese before serving.
If you do this before work in the morning, and you need 8 hours before you will be home again, this soup will do fine for that long. Super easy!
