Introduction

This recipe was adapted from a Williams & Sonoma recipe. Everyone RAVES about this soup and can't get enough of it. It makes a lot, but I guarentee it won't last long. Ingredients

    -3 boneless skinless chicken breasts (or 1.5 lbs)
    -1 onion (chopped)
    -3 celery stalks (chopped)
    -about 18 baby carrots (chopped)
    -8 c. water
    -8 tsp chicken base
    -1 tablespoon parsley
    -2 c. egg noodles

Directions

-Heat the water in a large pot and add chicken base. While the broth is coming to a boil, start to cut the carrots, celery, and onion.
-When the water boils, add the chicken and cook for about 10-15 minutes or until it is cooked throughout. Finish cutting the veggies.
-Remove the pot from heat and let the chicken cool in the liquid for a few minutes.
-Transfer the chicken to a cutting board and return the broth to a simmer. Add the onions, carrots, and celery. Let the veggies simmer until they are slightly soft (10-15 minutes) while skimming away the foam that may form at the top of the stock.
-While the veggies are simmering, cut the chicken into small cubes or shred the chicken. Set the chicken aside.
-Once the veggies are slightly soft, add the cut up chicken, noodles, and parsley. Simmer until noodles are tender (about 5 minutes)
-Enjoy.

-This whole process takes an hour (prep time is included in cooking time if you follow the steps above)
-Serves 8 (1 serving=1 cup of soup)

    Very Good
    Used a whole lot more onions, added garlic and more spices. Know somewhere on site there is similar recipe but included lemon juice. Thought I marked it but had to do a bit of experimenting. Amazing what a teaspoon of fresh lemon juice does for the flavor! - 10/22/18
