Ingredients

Crust:
1C all purpose flour
1 tsp. sugar
1/8 tsp. salt
3 T cold unsalted margarine
1/3 C low-fat cottage cheese
1/4 C plain low-fat yogurt
Filling:
12 oz. can evaporated skim milk
1/3 C low-fat cottage cheese
1/4 C grated Parmesan cheese
2 eggs
3 egg whites
1/2 tsp. salt
1/4 tsp. black pepper
10 oz pkg. frozen spinach
pie crust, baked and cooled
Directions
Crust:
In large bowl combine flour, sugar and salt. With 2 knives, cut in the margarine until the mixture resembles coarse crumbs. Stir in the cottage cheese and yogurt until the mixture forms a soft ball. gather the dough into a ball; wrap in plastic wrap. Refrigerate several hours or overnight. When ready to bake, roll out dough on a floured surface to a 13" circle. Fit dough into 9" pie plate. Preheat oven to 400. Line the pie crust with foil and fill with dried beans. Bake approximately 10 minutes. Remove foil and beans then bake 5-8 minutes longer, until crust is golden.

Preheat oven to 425. In medium bowl whisk milk, cottage cheese, Parmesan, eggs, egg whites, salt and pepper. Place pie crust in pie plate and spread spinach over the crust, then pour filling over the spinach. Bake 15 minutes; reduce oven temperature to 350 and bake until filling is set, approx. 20 minutes longer. Let cool 10 minutes before serving.
