Ingredients

    1 can Rotel tomatoes (10 oz.)
    1 can tomato sauce (8 oz.)
    1 cup long grain brown rice
    2 cups 99% fat free chicken broth
    1 tbsp garlic powder
    1 tbsp onion powder or dried onions
    1/8 cup of olive or canola oil
    salt and pepper to taste

Directions

heat oil in skillet. add cup of brown rice and let brown for a few minutes. add chicken broth ,tomato sauce, rotel tomatoes, garlic powder, onion powder, and salt and pepper . stir. bring to a boil and then turn down and let simmer with lid on.

    I'll have to try the cumin next time, but otherwise this turned out well. I just let it simmer until all the broth was soaked up by the rice. - 5/13/08

    This rice was a hit! I added Mexican Rotel and some cumin, and it was just wonderful. The servings are huge, so I might cut them in half. Also, I would give 5 stars, but the instructions don't include cooking time or serving size. No salt is needed in addition to the Rotel and chicken broth. - 3/16/07
