Introduction

Creamy Potato & Cheese Soup
Makes 5 -- 1 cup servings
Very Filling and I find no Desire to snack after this!!!!! More Broth needs to be added if reheated the next day! Crisp crumbled bacon can be added but I recommend using the bacon as a garnish because in goes all rubbery when it is cooked into the soup.

Ingredients

    2 cups Chicken Broth
    3 cups raw cubed Potatoes - peeled
    1 small onion--chopped
    1 small stalk celery--chopped
    1/4 cup carrot grated
    1 tsp salt
    2 tsp white vinegar
    1 1/2 cups 1% milk with 2 Tbsp. all-purpose flour
    1 cup shredded old cheddar (60 grams)

Directions

Bring first 7 ingredients to boil over medium heat,
Cover and simmer 20 minutes stirring occasionally
Whisk milk/flour mixture into hot mixture, stir in cheese.
Simmer uncovered 5-8 minutes or until thick stirring occasionally
