Ingredients

    1 cup Canned Pumpkin
    1 1/4 cups Splenda for Baking
    1/2 cup Water
    1/2 cup Extra Light Olive Oil
    2 Eggs
    1 2/3 cups Whole Wheat Flour
    1 tsp Baking Soda
    1 tsp Cinnamon
    1/2 tsp Salt
    1/2 tsp Baking Powder
    1/4 tsp Nutmeg

Directions

Heat the oven to 350*. In a mixing bowl, combine the pumpkin, sugar, water, olive oil, and eggs. Beat until well mixed.

Measure the flour, baking soda, cinnamon, salt, baking powder, and nutmeg into a separate bowl, then stir until combined (a great job for kids). Slowly add the pumkin mixture to the dry ingredients, strirring until just combined.

Spoon the batter into a 12-cup muffin tin lined with paper baking cups. Bake the muffins for 25 minutes. Cool for at least 10 minutes, then serve.

Serve warm. Makes 12 servings.
