Ingredients

    2 large eggs, whole
    3 large egg white
    Frozen spinach - 10 frozen cubes
    8 slices turkey bacon
    1 cup fresh mushrooms
    1/4 cup green onions
    1/4 cup Cheddar Cheese - shredded

Directions

Brown the turkey bacon, mushrooms and onions in a skillet. Drain any excess moisture.
In the microwave, thaw frozen spinach for 2min on high heat. Drain any excess moisture.
In a medium mixing bowl, add turkey bacon, mushrooms, onions and spinach with 2 eggs, & 3 egg whites or 3/4c egg beaters. Add in your cheese. Mix well.
Divide mixture into a 12 muffin muffin pan. Cook at 350degrees for 20 minutes or until inserted toothpick comes out clean.
