Ingredients

    2 Cups White enriched Flour
    1/2 Cup Shortening
    2 Eggs
    1 Cup Mashed Bananas
    1 Cup sucralose (Splenda)
    3 Tsp Baking Powder
    1/2 Tsp Salt
    1/2 Cup Pecans
    1 Tsp Vanilla Extract

Directions

Cream Shortening and sucralose together then mix in eggs.
Put ripe bananas in blender and liquify at medium speed, let rest for 5 minutes to remove aeration.
In a separate bowl combine flour, baking powder, and salt.
Mix bananas and dry mixture alternately with creamed ingredients until smooth.
Add vanilla and mix well. Stir in pecans by hand.
Pour into WELL greased loaf pan and bake at 300 degrees for 90 minutes.
Cool on baking rack in pan for 10 minutes, then run spatula around edges before inverting pan.

Makes 12 servings.
