Introduction

Ingredients

    4 fresh cod fillets
    A delishus tasty crumbed fish.
    flour to dust fish in.
    Egg to make an egg wash
    Fennel
    parsely
    Lemon Rind
    salt & peppeer
    oil to cook fish in
    Bread to make bread crumbs.

Directions

put flour in a bowl or dish & place to the side
beat egg in a bowl and place to the side
Process bread in whizz & put to the side
process fennel,parsley & rind of a small lemon and add this to the bread crumbs.
Heat oil in pan.
lightly dust fish with flour, shake off any excess.
dip fish into egg wash & then into the bread crumb mixture to cover completely.
Pan Fry fish in a small amount of oil for approx 3 mins then turn & cook other side for approx 2 mins depending on the thickness of the fillet.
Rest on brown paper,to drain. Season with salt & pepper
Serve immediately
