Ingredients

    2 cups flour
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp ground ginger
    1/4 cup canola oil
    1/4 cup molasses
    1 large egg
    2 tsp grated ginger
    1 cup splenda

Directions

roll by tbsp full into 36 balls
place on cookie sheet 1 inch apart
bake until cookies are cracked but still soft in the center
let cool on sheet 2 min
move to rack to cool completely
