Ingredients

    1-1/2 c Broccoli
    1-1/2 cup Cauliflower
    2 cups Baby Carrots
    1-1/2 cup Celery, chopped
    15 oz can DelMonte Diced Tomatoes (No Salt Added),
    15 oz can Chicken Broth, Light & Fat Free, College Inn (50% less sodium)


    Barley, Medium Pearled, Quaker, .75 cup

Directions

Place all veggies, can tomato & can broth in crockpot on low heat. Cook 3 hours. Cook barley according to directions. Add cooked barley, heat through 1 extra hour.
Serving size = 1 cup
