This comes from the 1971 Betty Crocker Cookbook and is the best pumpkin bread recipe I have found. It makes great mini-loafs for holiday gifts. Ingredients

2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 can (1 pound) pumpkin
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
2/3 cup coarsely chopped nuts
2/3 cup raisins, if desired
Directions
1) Heat oven to 350 degrees
2) Grease 2 9x5x3-inch loaf pans or 3 8.5x4.5x2.5-inch loaf pans
3) In large bowl, cream shortening and sugar until fluffy
4) Stir in eggs, pumpkin and water
5) Blend in flour, soda, salt, baking powder, cinnamon, and cloves
6) Stir in nuts and raisins
7) Pour into pans
8) Bake about 70 minutes or until wooden pick inserted in center comes out clean
I never use the raisins--I think it is better without.
There is a note in the cookbook that says "If using self-rising flour, omit soda, salt and baking powder." But, I have always included them.
