Introduction

This is a favorite of mine that I found in the Eating For Life Cookbook. I absolutely love this recipe because it doesn't taste like it would be healthy, but it is. Hint: flank steak is a tough piece of meat because it is so lean, the longer you marinate the more tender your meat will be, so try to marinate it overnight. Ingredients

    1/3 cup low-sodium light soy sauce
    1 tablespoon balsamic vinegar
    1 tablespoon extra virgin olive oil
    4 minced garlic cloves
    1 teaspoon ground ginger
    1/2 teaspoon ground black pepper
    1 (1 1/2 lb) flank steak
    1 package sliced mushrooms
    1 package dry McCormich mushroom gravy mix

Directions

1) Combine first soy sauce, vinegar, olive oil, garlic, ginger and black pepper in a large ziploc bag.

2) Pierce both sides of the flank steak with a fork.

3) Place steak into the bag with the mixed ingredients.

4) Refrigerate 4 hours minimum, but overnight for the best flavor.

5) Preheat broiler or grill.

6) Place broiler pan in oven for one minute.

7) Place the marinaded steak on the heated broiler pan.

8) While steak is cooking saute the mushrooms in a non-stick pan. After mushrooms are fully sauted make mushroom gravy according to package directions (with mushrooms).

9) Broil in oven on top rack for about 6-10 minutes per side for medium-well doneness.

10) Let steak cool for a few minutes and then slice across the grain into very thin slices( 1/8" approx.).
