Introduction

This is one of Hungary's well known and beloved dishes. It traditionally uses bacon drippings and whole cut-up chicken with skin. I also now use yogurt as a thickener for the sauce instead of the traditional roux. I have "lightened" it as best I can without loosing the flavour. It is usually served with dumplings called "Galuska", recipe follows, but I would recommend brown rice or whole grain pasta, rye bread and a lettuce salad (recipe also follows) . Ingredients

    2 Whole Chicken Breasts - 4 halves, no skin and boned
    1 Tbsp Olive Oil
    1 C. Onions, diced
    2 Cloves Garlic, Diced
    1 C. Green Pepper, Diced
    3 Tbsp Hungarian Paprika
    1 tsp black pepper
    1.5 C. Chicken Broth, low sodium
    .5 C. Yogurt


Directions

Heat oil in large pot and saute onions until soften, add garlic, green peppers and black pepper, and saute for another 5 minutes. Add the chicken to sear and sprinkle the paprika on the chicken while doing so. Add the heated chicken broth just to cover the chicken, and simmer for 30 minutes or until cooked. You can at this point stop if you want to make the dish ahead of time (just remember to refrigerate until ready to heat up). Just before serving, add the yogurt and gently simmer for a few minutes. Enjoy!
