Ingredients

½ kg rice noodles
1 tablespoon thick soy sauce
1 cup minced beef
½ cup chopped onion
1 tomato, diced
1 teaspoon curry powder
1 teaspoon soy sauce
½ teaspoon salt
½ teaspoon ground pepper
1 tablespoon cornflour, mixed with 1 tablespoon water
½ cup vegetable oil
½ cup water
10 lettuce leaves, tomato slices
Directions
If dried noodles are used, soak them in warm water for 15 minutes. Drain before use.
In a frying pan pour half of the oil and fry the noodles over a medium heat for a few minutes. Add the thick soy sauce. Stir well. Remove from the heat and pour onto a serving plate. Keep warm. Heat the remaining oil in a saucepan. Fry the chopped onion until soft. Add the minced beef and fry for 5 minutes. Add soy sauce, curry powder, salt and pepper. Stir in the diced tomato. Pour in the water and simmer over a low heat for 5 minutes. Blend in the cornflour mixture. Stir all the time as the sauce thickens. Spoon the minced beef sauce over the fried noodles. Garnish with lettuce leaves and tomato slices. Serve hot.
