Introduction

These are great served as a side dish with any meal. These are great served as a side dish with any meal.
Number of Servings: 6

Ingredients

    Red Potatoes 2lbs
    Olive oil 1/4 cup
    Paprika, 1 tsp
    Garlic, 6 cloves minced
    Salt 1/2 tsp
    1/2 lemon squeezed
    2 TBS Parmesan cheese

Directions

Cut potatoes in quarters and place in a 8x8 baking dish. Mix olive oil and add the rest of the ingredients and pour over potatoes and mix until all potatoes are covered. Sprinkle with cheese and cover with foil. Bake at 400 for 50 min uncover and bake for 10 minutes longer.

    I didn't really follow the recipe but it inspired me to make my own version: I chopped up a single potato, covered it in spray 0-calorie "butter", and tossed in the same spices and cheese. I microwaved for about 3-4 minutes. It was very good and quick! - 11/5/08

    i made it vegan by omiting the cheese and using smart balance instead of the butter. it was INCREDIBLE! so good! - 11/19/08
